There are a variety of things that can be done with leftover lamb. The first an most obvious choice would be to use the fillings and make a good ole lamb sandwich. Also, the parts can be used to make a nice lamb gravy. This can be done much in the same way turkey gravy is prepared. Some people speak of lamb salads being extraordinarily tasty. Ingredients needed for this would be lamb, along with normal ingredients used in a salad. A lamb soup is also a great option. Ultimately, lamb along with many other meats can be prepared in a number of delicious ways!

The other recipes below me are very good recipes. However, i prefer to re-bake it and mix it into a casserole instead. By rebaking it and marinating it, it is like recycling. The lamb becomes almost like new and you can not taste that it it being cooked the second time. One thing is that it might become less tender and can only be cooked well done because bacteria may thrive. Go with the casserole and you cant go wrong!

I agree with the last poster. I always make leftover lamb into stew. Here's the recipe for my favorite Orange Lamb Stew: Lamb meat, cubed. Diced veggies: 1 medium onion, 3 stalks celery, 3 large carrots, 2 parsnips. 1 can chickpeas (drained). 1 can tomato sauce. Liquids: 1/2 cup red wine, 3 cups chicken broth Seasonings: 2 cloves garlic, pinch cumin 1 large orange, segmented, including juice and zest. Sautee veggies. Add seasoning, red wine, and lamb meat. Mix in the tomato sauce, chickpeas, and broth. Add orange segments, juice, and zest. Bring to a light boil. If needed, add more water. You can add more orange juice to taste.

One thing you may be able to do is make a Lamb Stew Curry. You can buy curry cubes, which may be easy to find in a Asian store or maybe in a Safeway in the Asian section and follow the directions. You can add some potatoes and carrots, even some celery. Then you can serve it with a side of rice. It's quick and easy to make and it'll be something different.

You can make a wonderful lamb stew. Cut up the lamb into cubes, or chunks to a size that is to your liking, add onions, carrots, use some of the lamb juice to make soup stock, you can also use lamb bones, which of course will be removed later before serving, they can add flavor. You can then extend your stock adding some beef broth or bouillon, unless you can have a good specialty Middle Eastern grocer nearby that sells lamb broth. Add some cubed potatoes to thicken it up, and any other stew vegetables that you may like, and cook it on low, simmering it so that the flavors have time to meld, and the vegetables get tender.

Left over lambs can be used to make fillings for sandwiches. It can be washed and shredded and then used for making the filling by frying it. These filling can be deep-frozen and can be used for a month. Deep frying the shredded lamb pieces can be stored for longer period. Deep fried lambs can be used as a snack.

lamb tacos are a really wonderful thing. If you know how, make your own corn tortillas and serve with vinegared red onions, cilantro, and sides of sliced radishes, carmelized turnips, and/or roasted asparagus.

left over lamb curry! that's what I always do with my left over lamb. there are a lot of great recipes for that online. or if not, you can do a lamb and rice casserole. I actually just made that for thanksgiving.

It would be great mixed with some Tandoori spices, potato, peas, or other veggies for samosas. There's a lot of different ways to make them and they're rather easy so if you just google 'samosa' you should find some recipes that cater to your likes. Another idea would be to use it as a nice appetizer for your holiday parties. Just spread some feta and hummus on wheat crackers and put shredded lamb on top. This would also be great served with Kalamata olives.

To make it a lighter than a gyro try making a lamb salad, much of the same ingrediants, lamb, lettuce, tomato and cucumbers.
