I'm eating my leftover ground turkey and barley soup! It might sound a little weird, but it's delicious. In a pot, I saute garlic, onion, carrot, and celery, then add in some ground turkey that I browned in a separate pan. I saute those together, seasoning them to taste, then add chicken stock, cut up potatoes, and any other veggies that I have in my fridge and let it simmer for about 30 minutes. Then to that, I add pearl barley, bring it to a boil then drop to a simmer for about 20-25 minutes or until the barley plumps up and softens. Serve and enjoy!
