This dish is simply Lamb in Saffron. This is not an easy dish (or cheap dish) to make. Most of the cooking times vary by the person. It is not a simple 10 minutes of this and 5 minutes of that. The cook really needs to watch the ingredients cooking carefully, especially since the cost of Saffron is so expensive. When you are cooking the artichokes and your recipe says 5 minutes or 6 minutes, you need to adjust the time tremendously to add an additional 10 or 15 minutes -- you will know when it is ready because a fork will be able to pierce the heart easily. When I make this dish, I am in the kitchen a good 2 to 4 hours depending on the type of Lamb that I am using.
